For pure brisket

Look for places with a 12-hour smoke time minimum and post-oak as the fuel. Brisket should slice cleanly without falling apart, with a 1/4" smoke ring and a peppery bark.

For burnt ends

Kansas-City style burnt ends are increasingly popular in Texas. Order before 12pm — most BBQ spots sell out by 1.

For sides

Texas BBQ sides are often an afterthought. Look for house-made beans (not from a can), German potato salad, and corn-bread that's actually moist.
